Ah... but you don't need a "second" stroke...

Rather than starting from the letter shape and working your way out, start with the widest stroke (or outline) and work your way in.

Okay,

1: Duplicate your vectored type layer (to preserve the original)

2: select a brush at the widest setting (Say 20 pixels)
. . . stroke. Now you've got a 10 pixel stroke outside the letters

3: select a smaller brush and different color... (Say 10 pixels)
. . . stroke. Now you've got a 5 pixel stroke INSIDE your
previous stroke.

4: Now, drag the original type layer up to the top of the layers stack.

. . . now you've got type with a 5-pixel outline, surrounded by
another 5 pixel outline of another color.

:-)

Stacking order, and stroke width is everything.

You could use multiple layers in PS with Stroke layer style with diferent widts. Best result if you intend to print is to do it in Illustrator or another vector program, unless you intend to applye complex efects on each strokes...
You can use the same principle, overlapping objects and each with a diferent stroke, or use the appearance palete, and add new strokes with diferent colors.
You may whant to have each stroke as a separate object and can select Object>Expand appearance, or simply outline stroke , or ofset path, as you may need.
